The easiest way to make the perfect batch of brownies every
time. This recipe produces a scrumptious, well-balanced chocolate brownie with
a perfect crust. Although I like to have them very dense with a crunchy top,
there are a few simple alterations you can make to get a softer, more cake-like
result. Use this recipe as a platform to make your perfect brownie.
Making brownies from scratch doesn't have to be difficult.
Don't be afraid of flour and chocolate - the rewards you get make it all worth
it.
Step 1: Ingredients
Equipments:
- Kitchen scale - with this scale, you'll never need a set of measuring cups again. It's so much easier and more accurate!
- Mixing bowls
- 9 "x13" Baking Pan
- I love my kitchenaid, but a wooden spoon works just as well for this recipe.
- Rubber spatula
- Whisk
Material:
- 1 cup (225 g) butter, melted.
- 3 cups (600 g) white sugar
- 1 tablespoon (15 ml) vanilla extract
- 4 eggs (add one more for a fluffier result)
- 1 1/2 cups (180 g) flour
- 1 cup (70 g) unsweetened cocoa powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda (to create a nice crust - omit if you don't want this)
- 6 oz semisweet chocolate, or 1 cup semisweet chocolate chips (180 g)
Step 2: Prepare
Preheat the oven to 350º F (175º C).
Melt the butter in the microwave or on the stove.
Lightly grease a 9 "x13" baking pan with the butter paper.
Step 3: Measure
It's a real time saver to measure everything before you
start. So, get out that scale and a couple of bowls, and you're all set!
Turn on the scale and place the sugar bowl on top of it. Tare the scale so that it reads 0 g. Pour in the sugar until it reaches 600g.
Repeat the same for the flour and cocoa. You can tare the
scale again after adding the flour and before adding the cocoa, but I usually
just add the numbers together and get the weight I need.
Mix the flour and cocoa together with the baking soda and
salt.
With a scale, you never have to dirty measuring cups again!
Step 4: Mix butter with the sugar.
Add the melted butter, sugar, and vanilla in a large bowl.
Mix it!
Step 5: Add Eggs
Beat in the eggs, one at a time, mixing well after each one, until smooth.
Step 6: Add the Flour Mixture
Gradually add the flour and cocoa mixture to the eggs on low
speed.
Step 7: Chocolate
Mix the chocolate with a little flour and stir it into the
mixture with a rubber spatula or wooden spoon.
The flour will continue to coat the chocolate so it won't
fall to the bottom!
Step 8: Let’s Start
Baking
Pour the mixture into the prepared pan.
Pour the batter into the pan, mounding the edges a bit so
that everything bakes evenly (avoiding the typical mound that usually appears
in the middle after brownies are baked).
Bake the batter for 35-40 minutes.
Step 9: Ready To Eat
The brownies are ready when a toothpick inserted in the center comes out clean. At first my batches rose above the edges of the pan, but later sank downward to finish dense and rich.
